Raja’s Balinese Cuisine
This Nusa Dua Beach Hotel & Spa Bali’s signature restaurant is located within walking distance from the sands of Nusa Dua Beach adjacent the resort’s main swimming pool. This location makes for a panoramic dining experience at Raja’s, especially when seated on its outdoor patio.
The indoors are air conditioned and feature subtle lighting with gold and regal accents. Raja’s signature dish, the bebek betutu, must be pre-ordered when reserving a table at Raja’s, due to its lengthy cooking process. The presentation of this dish is similar to that of serving Peking duck. Classic, century-old Balinese recipes are prepared and presented to perfection.
The menu is a journey of discovery into the world of Balinese cuisine, boasting interesting Balinese names. The entrees at Raja’s include palem sari ulam which is a mixture of seafood combined with coconut milk, young coconut and chopped lime leaves, wrapped in palm, and steamed. Lawar kelungah sareng udang mepangang is a salad with finely chopped and boiled young coconut, blended with minced chicken and Balinese spices.
Sate lilit or ‘wrapped satay’ features minced chicken wrapped around lemongrass sticks then grilled. Be sampi mesitsit is seared dry shredded beef served in a lime chilli sauce. Vegetarian selections are also featured on the menu such as the bulung segare miwah kacang mentik megoreng, a seaweed salad served with fried red beans, soya bean cake and peanut sauce, or drona miwah tahu mekukus sareng kelape mekikih featuring steamed corn and tofu with grated coconut.
Traditional Balinese desserts include dadar gulung pandan pancakes and the rayunan penyineb bali sane kasub, which features the option of sampling four different desserts and sliced fruit. Interesting if not unusual ice cream flavours include spices such as honey and ginger, cinnamon, tamarind, and lemongrass.
